(Italian Mackerel with olives and onions)

This is a thirty minute dinner dish, from simple home cooked ingredients. Italian Mackerel with olives and onions is an easy recipe that I love.
Often children don’t like fish, but this recipe is perfect for everybody. It’s an incredibly versatile fish and I’ve tried it in a lot of different ways.
This is an Italian recipe and I use green olives from Castelvetrano, that are really good, the best you can ever try. I know that it is no easy to find them everywhere, but if you are in Italy taste them! Otherwise use green olives.
The key to the success of this dish is in the freshness of the fish – so ensure you buy the smaller mackerels, and cook it on the same day you buy it.
And now the recipe. Give it a try.
Italian Mackerel with olives and onions
Ingredients for 5 people
6 tbsp extra virgin olive oil
5 large onions
2 bay leaves
150 g green olives of Castelvetrano
100 ml of white wine
10 mackerel fillets
Salt and pepper
Instructions
Wash and cut onions thinly, then put the oil in a large saucepan with the onions and bay leaves and cook over medium heat for 20/25 minutes, stirring occasionally, until the onions are soft and golden .
Then add the pitted olives and wine and raise the heat to evaporate the alcohol. Season with salt and pepper.
Set aside the onions in the same pan and arrange the mackerel fillets skin side down. After a couple of minutes, turn the fillets, covering them with the onions. Let cook for other 8 minutes, approximately.
Serve warm or at room temperature, it is delicious and you can take it with gluten-free cous cous or boiled millet.
