Gluten Free Chestnut and Almond Cake
I absolutely love chestnuts and chestnut cakes (and this Gluten Free Chestnut and Almond Cake is no an exception).
I try to make as many recipes as possible when it’s chestnuts season.
Do you regularly eat chestnuts during chestnut season in Autumn? Or it’s an Italian thing?
Each Autumn, my dad used to bring home a case of chestnuts that my mother roasted under the oven grill, salted and then peeled for us to eat. We usually only ate them grilled this way…
Nowadays I continue this tradition with my children, and they love it very much.
But they are definitely much more versatile than you can imagine, you just need to know how to use them.

I was hooked by this one cake, the first time.
But this is different from that because there is also almond meal.
It is nicely balanced and has a nice soft and moist texture. And it is gluten free. Naturally gluten free. Maybe in English you say that it is flourless (let mie know, please)

This cake is perfect for breakfast or in the afternoon with a cup of tea (ohhh it’s so English <3), but you can use it even as dessert, adding some cream.

Gluten Free Chestnut and Almond Cake
Ingredients
- 200 grams chestnut flour
- 50 grams almonds
- 300 ml milk
- 2 eggs
- 120 grams sugar
- 60 ml seed oil
- 1 tea spoon baking powder
- 1/2 tea spoon vanilla extract or vanilla sugar
- А pinch of salt
Istructions

Preheat oven to 350F (180C). Grease 20 cm pan.

Roasted almonds for some minutes then processed with a spoon of sugar.

Add to the chestnut and the baking powder.

Beat eggs and sugar until fluffy. Add oil, slowly.

Incorporate the mixed flours and the milk, gradually, and beat to combine.

Pour in the pan and bake for about 35-40 minutes or until toothpick inserted in center comes out clean.

Cool completely
